Guacamole is easy to make, and a tasty dip for tortilla strips and to compliment fajitas and Tacos. There are tons of recipes for guacamole on the web. When making it we like it ‘chunky’ rather than whipped up like mashed potatoes. To do this, we begin by cutting the avocado in half length-wise and removing the seed. We then take a paring knife and make criss-cross cuts in the avocado meat without cutting through the skin. Then scoop out the diced avocado into a bowl.
Another thing – ingredients like avocados, limes and tomatoes vary in size and juiciness – so be flexible when making guacamole – taste it as you go along. It is hard to make a mistake – it’ll all be good!

Fresh Guacamole
Ingredients
- Avocados - 4 small or 2-3 large
- roma tomatoes - seeds removed and finely diced
- lime - juice from 1 fresh lime
- sweet onion - 2 Tbsp - finely diced
- fresh jalapeno pepper - 1/2 - seeds removed, diced finely, to taste.
- salt - 1/4 to 1/2 tsp - to taste
- fresh cilantro - 1/3 cup loosely packed chopped fresh cilantro leaves
Instructions
Prepare the avocado and place in a bowl. Add lime juice.
Add remaining ingredients and mash with a fork - taste as you go.
Don't mash too much.
