Chicken Tinga fillingI had not heard of this Mexican dish until this past summer while in Minnesota. We went to dinner at a place called the Granite City Brewery where they had a dish called Chicken Tinga Sopes. I had to try it, and it was fantastic. Here is their description of the dish:

Crispy corn tortilla cups, chicken tinga filling, shredded lettuce, fire-roasted corn & black bean salsa, avocado salsa verde, queso fresco, pickled Fresno chili, fresh cilantro.”

This recipe is for the chicken tinga filling. The the corn and black bean salsa, the avocado salsa verde, and the peppers are covered as separate recipes. They can all be used in other dishes.

Sopes are cup-shaped corn tortillas. They will be covered separately as well. Here in Texas they are available pre-made in many grocery stores, so check in the dairy case. You may have to ask for help finding them. I suggest using them because they greatly simplify making this dish. 

Chicken tinga recipes abound on the internet. In this recipe I aims for simplicity. I know using too many ingredients will prevent many readers from trying them. This recipe makes enough for eight six-inch tacos so let's say it will serve four people. It is also enough for maybe a dozen sopes. It freezes well so make a full recipe.

This is a quick and easy recipe for tomato salsa made in a blender. You can make up a batch in just minutes. The inspiration for this salsa came from a restaurant in Kanab, Utah this summer. We really liked the salsa, and decided that the taste we liked resulted from using fire roasted tomatoes. We went to work on duplicating the recipe. Our goal was to duplicate the flavor and make it super easy to make by substituting canned ingredients for fresh to reduce the prep time. See the recipe notes for the 'from scratch' version of the recipe. This recipe makes about a pint of salsa.

This is a simple poultry recipe for Cornish hens basted with a simple mango sauce. It involves brining the Cornish hens, making the basting sauce, and baking the birds. The connection to Mexico is the use of mangoes, which grow and are popular throughout tropical regions of Mexico. The recipe was adapted from the book “Mexico – The Beautiful Cookbook”, I only made two hens, but the sauce is actually enough for up to 6 hens. The only 'exotic' ingredient is the canned mangoes. If you have an H-E-B nearby they sell a 15 ounce can of Libby's mangoes in syrup. Check the hispanic section of your local supermarket. The method of baking and basting the birds is important to this recipe, so pay particular attention to that.

This is a light, creamy salsa that is very easy to make and really good as an alternative to tomato salsa. There is no cooking involved. You can make it tangy or spicy depending on your choice of peppers. I used one jalapeno pepper (tangy) – if you want zippy, use two jalapenos or one or two serrano peppers, which are hotter. This recipe will serve about 8 people. My tasters all loved it.

This is a satisfying chili made with readily available ingredients. Chipotle chilis are red ripe jalapeno chilis that are roasted over a wood fire. Buy them canned and packed in adobo sauce, which is a sweet and tangy puree of tomato, vinegar, garlic, and spices. The “con Carne” label means with meat - in this case beef stew meat.

Preparation summary: This recipe is very easy to prepare. You will season and brown the meat. Simmer the meat in a stock until tender. Shred the meat. Add beans and a few other ingredients to the meat. Simmer and serve.
