Our Mexican – Tex-Mex Recipes are listed on this page. If you are looking for food with a Tex-Mex or Mexican flair, try some of these. Most are quite simple and all are very tasty. I have placed them in recipe categories, to make it easy to select what you want to try out.
Many of these recipes call for chili peppers. If you are unfamiliar with the different types of chilis available in the Rio Grande Valley, Mexico, or any large grocery, I suggest that you read my Pepper Primer article. Chilis are not interchangeable – they have w wide range of flavors and ‘heat’. They can be used in recipes either as fresh peppers or dried. If dried they will most likely need to be toasted a couple of minutes, the seeds and webbing removed, and then re-hydrated in hot or boiling water.
